Fiscalini Cheddar
Fiscalini Cheddar won the only
American award in London in 2003 in
a cheddar category. It was awarded a
silvermedal in a category where no
gold medal was issued.
Made the same way as the regular
cheddar,and natural herbs are added
to subtlyseason the rich cheddar
taste. Can be enjoyed as snacks, in

A naturally smoked cheddar using
seasoned apple and cherry wood. It
is made from our Cheddar, and has
the flavor, color, and aroma you
would expect to find in a premium
smoked cheddar. It won a silver
medal at American Cheese Society in
2004 and a gold medal in 2006.

The label is whimsical and has won
awards for graphic design, but more
importantly , the cheese is delightful,
fanciful,and fun! Its distinctive label
depicts a cartoon Holstein cow posed
relaxing in a crescent moon, enjoying a
glass ofwine. Our young cheddar,
soaked in award winning California
North Coast Cabernet Sauvignon,
makes this cheese purple on the
outside, creamy on the inside, and most
appealing. It won a gold medal in 2003
at the Los AngelesCounty Fair and a
silver medal at the American Cheese
Society in 2004. It tastes as good as it
looks. In addition to theobvious use for
hors'dervs, Purple Moon can also be
easily melted, and used in cooking.
Melted on crackers orbaguettes, it
becomes a unique appetizer, and can
be added to omelets or quesadillas, or
in grilled sandwiches.

San Joaquin Gold
This is a cheese of our own creation. It is a semi hard cheese with a natural rind and a mild buttery taste. It is made in the style of a Fontina, but with more salt and a firmer texture. Straw in color, it is a wonderful cheese for snacking, but can also be used as a topping for soups or salads. It grates well, and melts easily. Uses include cheese toast or as a Caesar salad garnish.

Our Lionza cheese is a direct result of
the roots of the Fiscalini Family in
Switzerland. The cheese is named after
the tiny hamlet high in the Swiss Alps
where the Fiscalinis called home
formore than 300 years. One Fiscalini
family still lives there today. The cheese
is classified as an alpine cheese
because itwas first produced in the
Alps. We follow the same steps
developed generations ago, yet
currently used by cheesemakers in
the Ticino region of Switzerland, and
have produced a cheese remarkably
similarin taste, aroma, and texture to
the cheeses that are made there
today. Our wheels are26 pounds,
slightly larger than the traditional Swiss
wheels. The cheese islightly straw
colored with a few irregular eyes. It has
a thin natural hard rind, a sweet milky
caramel-like flavor, anenchanting
aroma, and a semi-soft springytexture.
This is a wonderful snacking cheeese,
and should be great in cooking and
fondues.
